I am no chef, but following recipes is so hard for me. I get too distracted and I like to make things up as I go. I will say it’s a ~risky~ way to live in the kitchen because I have made countless meals that were duds, but this one was amazing!
I looked up a few Pinterest casseroles beforehand and none of them were exactly what I wanted, so let’s get into my version of things.
Ingredients:
- package of mild sausage
- 8 eggs
- shredded cheese of your choice
- 1/4 cup of milk
- any veggies you want, I used green peppers
Instructions:
- Start browning your mild sausage.
- Start oven preheat. 350 degrees.
- While the sausage is cooking, crack 8 eggs into a separate bowl.
- Cut up your green pepper, onion, jalepeno, whatever toppings you want and add to the eggs.
- Add 1/4 cup of milk to the egg mixture. We only had a mixed bag of cheese and I grabbed a heaping handful and also added to the eggs. Mix in the bowl well.
- Set your sausage to the side when it’s done browning.
- Get your baking dish out and add about 2 cups of frozen hash browns to the baking dish. Then top the hash browns with the cooked sausage. I used about half of the sausage and kept the other half for lunch (a yummy pasta with sausage).
- Top with the egg and veggie mixture and mix it into the hash browns and sausage. I gave a quick mix in the baking dish.
- Cover the top with shredded cheese of your choice- I used a mixed blend.
- Bake at 350 for 55 minutes.
This recipe will keep in the fridge for 4 days. You could also wrap individually and freeze it for future use. I always just take mine out of the freezer and let thaw in the fridge overnight and then re-heat in the morning.
Pair this casserole with your favorite hot sauce and iced coffee on the side and you’ll have yourself a hearty and semi-healthy week long breakfast! Let me know if you try it out!
